The Furi Pro Jet Black East/West Knife 13cm delivers the versatility of a larger chef’s knife in a more compact, nimble design. Featuring a deep 13cm blade, it provides extra leverage for heavier cuts while remaining easy to manoeuvre for smaller everyday tasks. Intuitively positioned scallops along the blade reduce friction, helping ingredients release more easily for fast, smooth cutting. The precision-crafted X50CrMoV15 Japanese stainless steel blade is hand-sharpened to a 26° cutting angle and hardened to 55–57 HRC for excellent sharpness, edge retention and rust resistance. Its striking matte jet black oxidised finish is integrated into the steel for enhanced scratch resistance, while the reverse-wedge anti-fatigue handle locks comfortably into the hand to provide a secure grip and reduce slipping towards the blade. An optimised bolster protects the fingers while allowing the blade to be used and sharpened right through to the heel. Hand wash in warm soapy water with the blade pointed away and dry thoroughly after washing.
